Handcrafted cutlery
On an ongoing basis, we would say ! Like its fixed counterparts, the folding knife also serves as kitchen knife, table knife or outdoor knife. The large models are useful for hunting or camping. Go into survival mode with the XL Morta knives, worthy of the best armouries, thereby meeting the challenges of dry sausage, bread and other picnic battalions. As French artisanal knives directly native to the Brière region, Morta folding knives will make you the representatives of a living heritage. Because yes, after a sleep of 5,000 years, Morta has come back to life.
Stemming from the range of traditional knives, the folding knife has many advantages. As it’s compact, it fits easily in your pocket, backpack or picnic basket filled with delicious lunches. Its excellent grip is comfortable and practical. Whether out hunting, fishing or walking in the forest, draw your folding knife as quickly as your good spirits. More of a stay-at-home ? No problem, folding knives are indiscriminately useful for doing little jobs around the house, cooking and gardening.
Only about 10 to 20% of a Morta trunk is usable. Working solely on the most beautiful elements guarantees excellent quality. The same is true for the steel. Morta Knives only selects the best steel to ensure the blade’s solidity. Sandvik, Damascus or carbon steel have between 59 and 61 HRC Rockwell hardness. Each stage is performed manually by professional cutlers: forge, hammering, patina, etching. This ancestral traditional know-how is the pride of Atelier JHP and all Brière.
Our French pocket knives represent the pinnacle of artisanal cutlery, handmade in France by master cutlers at Atelier JHP in Brière.
Each folding knife combines premium materials, stainless steel, Damascus, or carbon steel blades, with that iconic 5,000-year-old Morta wood handle found nowhere else. Unlike mass-produced options, every knife bears the JHP stamp guaranteeing authentic workshop craftsmanship and comes with a lifetime warranty!
From opening packages to preparing meals, these pocket knives made in France become your faithful daily companion with unmatched cutting quality and elegance.
Folding knives carry centuries-old tradition dating back to 500 BC! Our pocket knives honor this ancestral know-how while innovating with modern craftsmanship.
Each folding knife is handmade in France following traditional craftsmanship, forge, hammering, polishing, all performed manually by professional cutlers.
We earned the prestigious EPV label (Entreprise du Patrimoine Vivant) in March 2025, recognizing our commitment to preserving this design icon of artisanal French knife-making!
Morta is precious wood unlike any other, ancient oak that rested 5,000 years in Brière marshes, undergoing natural fossilization! Only 10-20% of each trunk is usable, and we select only the finest materials for excellence.
This beech wood ancestor (it’s actually fossilized oak!) creates handles with unique caramel veins impossible to reproduce industrially, offering superior grip, durability, and authenticity.
Each French pocket knife tells a story connecting you to millennia of natural history. Nourished with vegetable oil at our workshop, the handle develops a personal patina with your hand’s warmth over daily use. It’s the icon of French terroir in your pocket!
We craft folding pocket knives with three premium steel types, all with exceptional hardness (59-61 HRC Rockwell) ensuring superior sharpness and cutting quality:
Each blade type offers advantages in sharpness, aesthetics, and performance. Our cutlers hand-forge Damascus and carbon blades for that artisanal touch, while stainless steel blades deliver worry-free elegance for pocket knives made in France!
Absolutely! Every Couteaux Morta folding knife is already unique thanks to Morta’s fossil veins, but personalization takes it further! Our laser engraving technology offers unmatched precision on blade or handle:

At Atelier JHP, traditional craftsmanship meets meticulous attention to detail! Our team of 9 passionate cutlers handcrafts approximately 5,000 knives annually, each one a masterpiece.
The manufacturing process involves manual stages:
We work only the finest materials: premium steel, 5,000-year-old Morta wood, and optional mammoth ivory.
Every knife bears our JHP stamp certifying complete workshop fabrication. As master artisan of art and EPV-labeled (Entreprise du Patrimoine Vivant), we guarantee manufacturing quality that honors France’s knife-making heritage!
Without hesitation! Our folding pocket knives excel in versatility, kitchen knife, table knife, steak knife, or outdoor companion. Large models like the Morta XL are worthy of the best armories, perfect for hunting, camping, hiking or bushcraft. The compact design fits your pocket, backpack, or picnic basket while offering excellent grip for comfortable, practical use. Professional chefs, hunters, fishermen, and outdoor enthusiasts trust our cutting quality and durability.
From preparing game to tackling “wild sausage battalions” at picnics, these French folding knives deliver exceptional performance whether you’re home or in the forest!
Proper care ensures your artisanal knife lasts generations! For stainless steel blades: clean with damp cloth and soapy water, dry immediately. For Damascus and carbon steel: use soft, dry cloth only (they develop protective patina). The Morta handle spent 5,000 years in wet peat and now prefers staying dry, just wipe with dry cloth! Already oiled at our workshop, it naturally patinates with use.
For sharpening, use our natural whetstone or sharpening steel with consistent 15-20° angle. Add a drop of neutral oil to the mechanism occasionally, that’s it!
Safety and ease of use guide our mechanism choices! Our folding pocket knives feature various proven locking systems: Liner-lock (plate blocks blade on heel, allows one-handed operation), Lockback (rear pump mechanism, our signature at JHP workshop), Frame-lock (entire handle immobilizes blade).
Opening methods include thumb notch (ergot), precisely the device you’ll find on Atelier JHP creations.
Each mechanism combines smooth deployment with secure locking, ensuring your French pocket knife performs safely whether preparing meals or tackling outdoor tasks.
French regional knives carry centuries of tradition, each representing its terroir and local craftsmanship. Couteaux Morta continues this heritage while offering something truly unique: exclusive Morta wood that no other cutlers can work! This 5,000-year-old fossilized oak from Brière marshes makes each handle one-of-a-kind.
We combine ancestral know-how (hand-forging, traditional lockback mechanisms) with innovations (Damascus 120-layer steel, mammoth ivory inlays, personalization).
The result? Artisanal cutlery honoring French heritage while delivering originality and authenticity found nowhere else. Each knife makes you representative of living Brière heritage, a regional knife born from our terroir!
The word “couteau” carries deep meaning in French culture, it’s not just a knife, it’s heritage, passion, art! Our folding pocket knives embody this through every detail: the distinctive Morta wood connecting you to 5,000 years of Brière history, Damascus steel arabesques echoing artistic traditions, hand-forged carbon blades bearing visible hammer marks from our cutlers’ ancestral gestures.
The aesthetics balance rustic authenticity (natural wood grain, forge patina) with refined elegance (polished steel, brass accents, optional mammoth ivory).
Each handcraft piece tells the story of Brière, transforming daily carry into an emotional connection with French terroir. More than tools, they’re treasures of artisanal cutlery that make hands tremble with joy when choosing “their” knife!
