A FESTIVAL

TO PREPARE YOUR MENUS

From a very broad range, our table and kitchen knives are intended for sedentary use. You move from one to another in a symphony of gestures. It’s a joy to cut vegetables, meats and fish with this high-quality precision blade. The big names in culinary art like Eric Guérin will agree.

Individually, the chef’s knife, Damascus chef’s knife and paring knife (the latter also available in XL version) will be equally useful in the kitchens of top chefs and your own kitchen. Family stews can’t wait. Start chopping now. These knives will be to you as bows are to archers and pianos to pianists.

You’re not a famous chef? So what? That’s no reason not to have good equipment or indulge yourself. Courage comes from daring, the joy of cooking from chopping things up.

A PRIVILEGE

FOR YOUR GUESTS

Discovered at the very bottom of the Brière marshes, Morta remained buried for 5,000 years before metamorphosing. How did it end up adorning these marvellous knives ? It’s an accumulation of adventures and encounters.

First the team of cutlers tore Morta from its deep sleep, dragging it to their workshop. Whereupon Morta understood the opportunity before it by agreeing to be crafted by these artisans, who were woodworkers, designers and blacksmiths.

You’ve invited friends to dinner, so set a beautiful dining table. The tablecloth is whiter than white, the crockery in porcelain, the glasses crystal, but something’s missing. Perhaps a little authenticity ? A practical, solid touch ? Morta table knives will offset the rest of the décor. Why ? Because they fear nothing! Their strength is only equalled by their majesty.

With these knives you cut to the heart of the matter! Gather your guests around for a story as lovely as that of your friendship. Placing a Morta knife in the hands of a good friend is like sharing good bread. The Prestige line can be enhanced with a blue border in vulcanized fibre. You can then combine the authenticity of the materials with the modernity of the finish.

THE MARRIAGE OF EXCELLENCE

AND EASY SHARPENING

THE STEEL OF PARING KNIFE BLADES

Chef and paring knife blades are designed in Sandvik steel (14c28n). Their 59 HRC Rockwell hardness combines corrosion resistance and easy sharpening.

THE STEEL OF TABLE KNIFE BLADES

Table knife blades are designed in X50CrM0V15 steel for a perfectly fine cutting edge. This stainless steel is made up of Molybdenum and Vanadium. So it is also perfectly corrosion-resistant and ideal for heavy usage.

PRESTIGE LINE | TOP-OF-THE-LINE STEEL BLADE

The blades of the Prestige line are in Damascus steel (RWL34/PMC27), with 60HRC Rockwell hardness.

This exceptional line is enhanced by a blue border in vulcanized fibre. You can then combine the authenticity of the materials with the modernity of the finish.

Frequently asked questions

  • What makes the perfect kitchen knife for professional chefs and home cooks?

The perfect knife combines superior steel quality, ergonomic design, and precise balance. Our chef knives use Sandvik 14C28N steel with 59 HRC hardness, offering exceptional sharpness for slicing, dicing, and mincing.

A quality kitchen knife should feel like an extension of the chef, with excellent grip and remarkable cutting power for all culinary preparations.

Whether you’re a professional chef or passionate home cook, the best knife is one that feels good in your hand and withstands the test of time.

  • How do chef knives differ from Japanese kitchen knives in design and performance?

European chef knives typically feature more curved blades ideal for rocking chopping techniques, with softer steel (55-60 HRC) that’s more durable for heavy-duty use. Japanese kitchen knives use harder steel, are lighter weight, and excel at precision slicing tasks.

The santoku knife, a popular Japanese knife, provides balance between chef and vegetable knife functions, excellent for chopping herbs, slicing cheese, and cutting vegetables.

Our chef knife, with its balanced weight and razor-sharp edge, offers versatility for most kitchen tasks.

  • What types of cutlery steel offer the best sharpness and precision?

Sandvik 14C28N steel, introduced in 2008, is renowned for exceptional edge retention and corrosion resistance. Its composition includes chromium, carbon, manganese, silicon, nitrogen, phosphorus, and sulfur for optimal hardness and durability.

Damascus steel, made from RWL34/PMC27 combination, offers both aesthetic appeal with distinctive moiré patterns and superior performance with 60 HRC hardness.

For table knives, X50CrMOV15 stainless steel provides excellent corrosion resistance with molybdenum and vanadium for heavy usage applications.

  • How should you properly sharpen and maintain a high-quality knife collection?

Professional sharpening requires maintaining consistent angles on whetstones, with Eastern knives typically sharpened to 15° and Western knives to 20°. Regular honing with steel realigns the edge without removing material, while actual sharpening removes steel to create a new edge.

Daily maintenance includes hand washing with warm water and mild soap, immediate drying, and proper storage in knife blocks or magnetic strips.

Professional cooks should hone daily, while home cooks benefit from weekly ceramic rod honing.

  • What are the best paring knives for precision vegetable and fruit preparation?

Paring knives feature thin, semi-pointed, slightly tapered blades measuring 7-11cm, perfect for trimming fruits, removing seeds, and precision cuts.

Our paring knives use Sandvik 14C28N steel for remarkable cutting edges with compact size and lightness for precision cuts.

The vegetable knife’s ‘bird’s beak’ curved blade allows close cuts on round fruits like apples, while professional pastry chefs value it for sculpting and refining dessert presentations.

The XL version provides larger cutting capacity while maintaining precision and elegance.

  • Why choose handcrafted knives from artisan cutlers over mass-produced options?

Artisanal knives are designed to traverse time, unlike industrial models often victims of premature wear. Hand-crafted knives benefit from meticulous attention at each manufacturing stage, including rigorous steel selection and heat treatment.

Cutler artisans ensure perfect harmony between handle and blade, creating balance that makes cutting natural and effortless.

The best kitchen knife remains the one you enjoy holding between your fingers – emotional connection matters beyond pure specifications.

  • How do you care for knives with wooden handles like traditional Morta wood?

Wooden handle care requires more attention than steel handles. Never put wooden-handled knives in dishwashers, as temperature changes and moisture cause swelling, cracking, and damage.

Mineral oil, camellia oil, or beeswax applications prevent drying and maintain the wood’s integrity. Avoid food-based oils like olive oil that can turn rancid. Annual thorough oiling is recommended.

Morta wood handles should avoid water contact and benefit from the natural patina developed through regular palm contact.

  • What knife accessories and knife sharpeners do professional chefs recommend?

Professional sharpening systems include whetstones (immersed in water for 5 minutes before use), ceramic rods, and leather strops for maintaining razor edges.

Complete knife care kits should include cut-resistant gloves and various grit stones for comprehensive maintenance.

Proper storage options include knife blocks, magnetic knife strips, and blade guards for drawer storage while protecting sharp edges.

Essential accessories include wooden cutting boards made from walnut, cherry, or maple wood that protect blade edges better than glass or stone surfaces.

  • What defines quality knives suitable for both professional kitchens and home cooking?

Quality knives combine superior materials, precise construction, and ergonomic design.

Our range includes knives with slightly softer steel for flexibility and easier sharpening, plus hardened steel options for long-lasting sharpness. Professional-grade knives offer exceptional sharpness, balance, and durability suitable for heavy-duty culinary use.

The versatile chef’s knife serves as kitchen essential, offering comfort and efficiency for thinly slicing, cutting, mincing, peeling and preparing all foods with remarkable grip.
